For my supper tonight I had my go-to meal: a Spanish Omelette.  I don't know why it should be particularly Spanish, since it should be the staple supper (or lunch, or breakfast) of every smallholder, since it is made from three ingredients which every smallholder worth the name should always have in abundance: onions, potatoes and eggs.  I add chillies and herbs to mine, but they are not necessary - salt and pepper do quite well. The (half-eaten) one pictured took two onions, two potatoes and ten eggs.  It would easily feed four people and cost (apart from salt and pepper - which is a matter of pence ) nothing.

Add a couple of glasses of home-brewed cider or beer and you have a pretty good supper - and no bill!

Thats my idea of an Omelette. My OH dont make em like this. She fries the eggs and then adds the filling and folds the sides over like a wrap. Its ok.
